RECIPE: PEPPER & ZUCCHINI PASTA


RECIPE: PEPPER & ZUCCHINI PASTA
Con and I made this pasta last night based off of some old Chatelaine recipe. Naturally this version is cheaper and easier, but it’s gooood and its hard to screw up (ahem connie).

YOU WILL NEED:
-1 large red bell pepper
-1 large green bell pepper
-2-3 medium-sized tomatoes
-1/3 cup freshly chopped oregano (or Old House bottled if you’re cheap and lazy like us)
-1 large lemon
-1 tbsp Italian seasoning (or sub spaghetti seasoning like we did)
-1/4 cup olive oil
-dash of pepper
-dash of salt
-couple handfuls of some kind of pasta
-cheese if you’re into it (EVERYONE SHOULD BE INTO 'THE CHEESE')

STEPS:
-Cut up the veggies nice and small and boil the water. Put the veggies in a large bowl and stir in the seasonings, lemon juice, oil.
-Cook the pasta. Not hard. Add the zucchini to the boiling water for the last minute of cooking. Drain and throw everything together in the big bowl.



-Stir it all up. Add the cheese if you want.

Optional:
-If you’re not into cold salad-type pasta, fry up the veggies with the olive oil and seasoning mixture and mix it all together.
